Toasted Baguette with Spinach & Artichoke

  1. In a large mixing bowl, combine the bread flour, instant yeast, and salt.
  2. Gradually add the warm water to the dry ingredients while stirring with a wooden spoon or a dough whisk.
  3. Once the dough comes together, transfer it to a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. If the dough is too sticky, you can add a little more flour.
  4. Place the kneaded dough in a lightly oiled bowl and cover it with a clean kitchen towel. Allow it to rise in a warm place for about 1-2 hours, or until it doubles in size.
  5. Preheat your oven to 450°F (230°C). Place a baking stone or a baking sheet in the oven to preheat as well.
  6. Once the dough has risen, transfer it back to the floured surface and gently deflate it by pressing down with your hands. Shape the dough into a long baguette shape, about 14-16 inches in length.
  7. Place the shaped baguette onto a parchment-lined baking sheet. Cover it with a clean kitchen towel and let it rise for another 30 minutes.
  8. Using a sharp knife or a razor blade, make diagonal slashes on the top of the baguette.
  9. Carefully transfer the baguette, with the parchment paper, onto the preheated baking stone or baking sheet in the oven.
  10. Bake for about 20-25 minutes, or until the baguette turns golden brown and sounds hollow when tapped on the bottom.
  11. Once the baguette is baked, remove it from the oven and let it cool on a wire rack.
  12. Once the baguette has cooled slightly, slice it into 1-inch thick diagonal slices.
  13. Preheat a grill pan, skillet, or toaster oven. Brush both sides of the baguette slices with olive oil.
  14. Toast the baguette slices for a few minutes on each side until they turn golden brown and crispy.
  15. Remove the toasted baguette slices from the heat and let them cool slightly.

  17. Place the topped baguette slices back on the baking sheet and return them to the oven. Bake for an additional 8-10 minutes, or until the topping is bubbly and lightly browned.
