Garlic & Herb Fontina Cheese Dip Shrimp Scampi

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup dry white wine
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 cup Garlic & Herb Fontina Cheese Dip
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • 12 ounces linguine or spaghetti, cooked according to package instructions

Instructions:

  1. Prepare the Shrimp:
    Pat the shrimp dry with paper towels and season with salt and pepper.
  2. Cook the Shrimp:
    In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Make the Scampi Sauce:
    In the same skillet, add the remaining butter and olive oil. Add minced garlic and cook until fragrant. Add the cherry tomatoes and cook for an additional 2 minutes.
  4. Deglaze the Pan:
    Pour in the white wine, scraping the bottom of the pan to release any browned bits. Let it simmer for 2-3 minutes.
  5. Add Cheese Dip:
    Stir in the Garlic & Herb Fontina Cheese Dip until it’s well combined and smooth.
  6. Combine Shrimp and Sauce:
    Return the cooked shrimp to the skillet. Add lemon juice and zest, tossing everything to coat the shrimp in the sauce.
  7. Serve:
    Serve the shrimp scampi over cooked linguine or spaghetti. Garnish with fresh parsley.
