Garlic & Herb Fontina Cheese Dip Shrimp Scampi
Ingredients:
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup dry white wine
- Juice of 1 lemon
- Zest of 1 lemon
- 1 cup Garlic & Herb Fontina Cheese Dip
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
- 12 ounces linguine or spaghetti, cooked according to package instructions
Instructions:
- Prepare the Shrimp:
Pat the shrimp dry with paper towels and season with salt and pepper. - Cook the Shrimp:
In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside. - Make the Scampi Sauce:
In the same skillet, add the remaining butter and olive oil. Add minced garlic and cook until fragrant. Add the cherry tomatoes and cook for an additional 2 minutes. - Deglaze the Pan:
Pour in the white wine, scraping the bottom of the pan to release any browned bits. Let it simmer for 2-3 minutes. - Add Cheese Dip:
Stir in the Garlic & Herb Fontina Cheese Dip until it’s well combined and smooth. - Combine Shrimp and Sauce:
Return the cooked shrimp to the skillet. Add lemon juice and zest, tossing everything to coat the shrimp in the sauce. - Serve:
Serve the shrimp scampi over cooked linguine or spaghetti. Garnish with fresh parsley. - Enjoy:
